At Getaway Farm we raise Galloway cattle. The Galloway is a very old breed originating
in south western Scotland. Unlike cattle
selected to grow fast on grain, Galloways were bred to thrive as grazers on
natural pastures.
Galloways are renowned for their thick and curly hair coats,
which give them the ability to stay comfortable even in cold and wet
weather. Unlike most cattle which
develop a thick layer of back fat to stay warm, Galloways store most of their
fat as “marbling” throughout the meat. This gives Galloway beef a distinctive eating
quality—lean, yet exceptionally juicy, flavorful, and tender.
